Homemade Nutty Oatmeal Bars

Ingredients
  • 1/4 Cup Peanut Butter
  • 1/3 Cup Light Corn Syrup
  • 1 Tbsp. Honey
  • 1 tsp. Vanilla Extract
  • 1 Cup Oatmeal/Quick Oats
  • 1 Cup Candied Almonds {plain almonds can also be used, but trust me you want the candied}
  • 1 Cup Cashews
  • 1 Cup Salted Peanuts
Instructions
  1. Preheat oven to 350°F.
  2. Microwave corn syrup in a medium microwave safe bowl about 30 seconds.
  3. Add peanut butter, honey and vanilla and stir until completely combined and creamy.
  4. In a separate bowl combine all the nuts and mix well.
  5. Pour corn syrup mixture over mixed nut mixture and mix until evenly coated.
  6. Stir in oatmeal and combine well.
  7. Line a 9×9 glass square baking dish with parchment paper (hint- I use chip clips to hold the parchment paper in place).
  8. Dump all ooey gooey nutty mix into the lined baking dish.
  9. Spread evenly with a rubber spatula.
  10. Bake for 15 minutes.
  11. Remove from oven and allow them to cool on a wire rack for about 10 minutes. Transfer to a plate and refrigerate until completely firm.
  12. Cut into bars. I made 12 bars by making 4 long strips and cutting them into 3rds.
