Berry Almond Salad with Chicken

You may or may not know about the new berry salad they have at Wendy’s. I don’t make a habit out of frequenting fast food joints, but during the last four weeks of the school year I felt like they knew me by name at Wendy’s.

My daughter had hours and hours of dance rehearsals. On top of that mix in one kid in band and one kid in orchestra with end of year concerts. Swim meets, school dances, clubs, oh my! I swear I pack in more stress, errands, and running around in June than I do the entire rest of the year. I barely had enough time to eat dinner, let alone make it myself.

So here we are, finally in the first week of summer vacation. There’s no telling when I will be done with this (done!) and ready for school to start back up. For now I will bask in the glory of little to no responsibilities.

And little to no fast food restaurants.

The one thing I really would have missed is this salad, however, so I went ahead and figured out how to make it myself.

I ordered this salad begrudgingly at Wendy’s and I had low (very low) expectations for it. Fruit and chicken on a “mixed green” salad from a fast food restaurant? I imagined mushy blueberries, sour strawberries, and gristly chicken on half brown iceberg lettuce.

Maybe I should cut Dave and Wendy some slack! The salad was actually delicious with super fresh fruit, mesclun greens, and real chicken breast. Um, it was really good. So good that I ordered it twice a week for four weeks.

As good as it was, there’s no need to run out to the drive-thru when this salad is so easy to make on your own. The dressing consists of four ingredients shaken together and the salad doesn’t even require a recipe. Just mix together the greens, toppings, and dressing. Fast, healthy food from your our kitchen. Now that’s better.

Easy Raspberry Vinaigrette
Recipe type: Dressing
 

Ingredients
  • ½ cup raspberry vinegar
  • ½ cup olive oil
  • 4 teaspoons agave nectar (may substitute honey or other sweetener if you prefer)
  • 2 teaspoons mustard

Instructions
  1. Measure all ingredients into a mason jar or empty, washed dressing bottle.
  2. Shake to combine.

Ingredients
  • Mixed salad greens
  • Handful of fresh strawberries, sliced
  • Handful of fresh blueberries
  • Handful of silvered almonds
  • Handful of Asiago cheese
  • Grilled chicken, chopped
  • Raspberry vinaigrette dressing

Instructions
  1. Prepare greens in a salad bowl and top with berries, almonds, cheese, and chicken.
  2. Add raspberry vinaigrette dressing to taste.

Try it. You can add more or less sweetener to your taste. I like my raspberry vinaigrette a little on the tart side.

I love the thought of making over this salad at home. I keep seeing it on commercials and thinking about trying it, but I’m sure an at-home version is even better. So glad your days have calmed down a bit…wishing you a great summer!

Yay! You finally made it to summer vacation :-) . We are just starting week 2. It was so nice not having to rush it the door every morning last week, but the constant bickering b/w my two kids has already begun. Sigh…Your salad looks delicious! I ate this salad from Wendy’s 3-5 time a week when I discovered it last year during summer. It is actually good. Although I don’t like the raspberry dressing, I just use low fat Italian and it works for me. LOL. I’ve never received my salad with hot chicken, it always seems to be cold when I get my order. Thank you for the posting. I’m sure the home version will taste wayyy better.

I LOVE THIS SALAD is my fovorite and i can eat this every day, I make it at home and you can add more in to it if you like. Adding grapes is so delish.

I like my dressing a little sweeter —- this is the one I make and evryone
seems to like it very much.

Raspberry Vinaigrette dressing
1 bottle of Kraft Raspberry Vinaigrette dressing
2 teaspoons of Dijon mustard
Splash of Raspberry Wine Vinegar
1/3 cup seedless Raspberry jam
2 or 3 teaspoons sugar
Combine everything in a bowl and beat with an electric
beater until well blended.
