Egg Baked in an Avocado

I absolutely love avocado. It’s super high in fat and calories but I keep telling myself “it’s the GOOD kind”. Right? I can pretty much find a way to add avocado to anything. We won’t talk about all the times I just cut one in half and eat it with a spoon.

I recently read a post on The Kitchn about cooking an egg inside an avocado half. Cooked avocado? Now, that I’ve never tried. I do make omelets with avocado but I just put it on top at room temperature. I decided that I need to try this. I have a feeling it will either be astonishingly good, or vile.

Ingredients:

  • 1 avocado
  • 2 eggs
  • shredded Parmesan cheese
  • paprika
  • salt and pepper

Preheat oven to 425 degrees F with a small (oven-proof) pan inside. Slice avocado in half, remove the pit and scoop some of the avocado out to make enough room for an egg. Eat the stuff that you scooped out. Place the avocados in the preheated pan and crack one egg inside of each half. Sprinkle with cheese, paprika, salt, and pepper and return pan to oven until the eggs are done the way you like them (10 minutes = runny; 20 minutes = hard)

The verdict:

Meh

Nothing astounding here. It wasn’t gross and it wasn’t great, but it sure looked pretty. I think cooking the avocado took away some of the flavor, and it needed salt. Next time I would season the avocado before adding the egg. Also, I cooked the egg too long. I’m a dipper but I ended up with hard yolks. Apparently they keep cooking after you take them out.

This recipe is all the rage lately so some people must be loving it. If you’re an avocado addict it’s worth trying just to say you did.

I’m not avocado addict, but it looks lovely :) I think it would be nice and easy breakfast if you have guests at home :)

I absolutely HATE Avocados, no really….I hate them…. but we are all trying to eat healthy and lose some weight. So, I just remembered what the Marine Corps taught me in situations like this….”SUCK IT UP!!”. That’s exactly what I did. I made this recipe and I “FORCED” myself to take that first bite, the whole time thinking that I would have to hold my nose and choke my breakfast down. Well, let me tell you, this was sooooo good. I left the yolk runny and I think next time I will cook it all the way through, but I think we will be having this more often. It also works with a tiny sprinkle of mozzarella cheese if you don’t have Parmesan. And it cooks just a little faster on Lo Broiler. This is my new green eggs and ham go to recipe. It’s 2 hours later and I am still FULL on just half an avocado and a banana. Not satisfied, but FULL. Thanks for sharing.
