I’m so excited to be here today, thank you, thank you! First, I’d like to thank Julie for giving me the opportunity to be a guest blogger for the very first time! And I would also like to thank my mother for never teaching me how to cook, so I could really appreciate the steps and its beauty. And of course I have to thank the big Man Upstairs. Without him-Ohh… What?
We aren’t at a blogger award show? Oh, silly me. OK, let us get started then. But, in all seriousness, thank you Julie. You are seriously an awesome blogger and an even better photographer. I hope I don’t disappoint.
So, I have to say I was beyond giddy when Julie asked me to be a guest blogger over here at Tastefully Julie. I read her email out loud to my husband while we were lying in bed (at 8:oo pm, we’re totally the oldest young couple alive) and immediately we both became overjoyed and started jumping on the bed holding each other, screaming with excitement. Well, actually, we didn’t get that excited but it would have been a great scene, wouldn’t it?
I went to bed that night stressing about what post to share. “How do you even do this stuff?” “Do I use an old recipe, make a new one?” “What if it isn’t good!?!” I ended up being awakened by a dream that I was in some strange basement with tons of floor to ceiling windows, taking cover from a vicious tornado. I hope that wasn’t a sign! So after all that, I came up with this. I have been saving this post for a special day, and I think this day qualifies.
Today we’re making…HOMEMADE NUTTY OATMEAL BARS!!!! They are Guhhhh-uDD.
Now normally I’d fill your sights with tons of step by step photos but our friend Julie doesn’t roll that way which is totally cool. So I’ll do my best to just give ya a few so you get the hint!
- ¼ Cup Peanut Butter
- ⅓ Cup Light Corn Syrup
- 1 Tbsp. Honey
- 1 tsp. Vanilla Extract
- 1 Cup Oatmeal/Quick Oats
- 1 Cup Candied Almonds {plain almonds can also be used, but trust me you want the candied}
- 1 Cup Cashews
- 1 Cup Salted Peanuts
- Preheat oven to 350°F.
- Microwave corn syrup in a medium microwave safe bowl about 30 seconds.
- Add peanut butter, honey and vanilla and stir until completely combined and creamy.
- In a separate bowl combine all the nuts and mix well.
- Pour corn syrup mixture over mixed nut mixture and mix until evenly coated.
- Stir in oatmeal and combine well.
- Line a 9×9 glass square baking dish with parchment paper (hint- I use chip clips to hold the parchment paper in place).
- Dump all ooey gooey nutty mix into the lined baking dish.
- Spread evenly with a rubber spatula.
- Bake for 15 minutes.
- Remove from oven and allow them to cool on a wire rack for about 10 minutes. Transfer to a plate and refrigerate until completely firm.
- Cut into bars. I made 12 bars by making 4 long strips and cutting them into 3rds.

Mmm very delicious and healthy - the perfect snack for a springtime hike or visit to the pool to replenish those good carbs. Great recipe!
It reminds me of something that we get here known as chikki. It so delicious that my mouth is already watering. I am sure this one too will be fantastic to taste as well as make.
